In the daily production of lavash in different sizes or longer than 54 cm, the rafata ( bread pillow) mechanism is removed from the machine and the rafata (lavash caution) is guided manually.

The machine in the first video does not have a rafta mechanism, but in the second video the machine works with a rafata mechanism.
• When the Rafata mechanism is dismantled, the ease of work is somewhat impaired.
Why is it not possible to make lavash in different sizes , daily when there is Rafata mechanism?
It is actually possible, but when there is a Rafata mechanism, 4 unique gears of each cutting cylinder need to be changed along with the replacement of each cutting cylinder, and it takes 4 hours to replace these gears, so changing the blade daily is an extremely troublesome issue.
On the other hand, when the rafta mechanism is removed, the blade can be changed within 10 minutes at most, without the need to change the gears.
Why is it not possible to make lavash longer than 54 cm when there is a rafata mechanism?
There is a timing system between the rafata mechanism and the conveyor from which the dough comes above, and in order to ensure this timing system, the length of the lavash must be 30 to 54 cm.
Therefore, when the length of the lavash exceeds 54 cm, the rafata mechanism is dismantled and the above conveyor is fixed.
